What would you like to tell us about yourself?
The details of my life are quite inconsequential. My father was a relentlessly self-improving boulangerie owner from Belgium with low-grade narcolepsy. I kid. I’m actually just an only child, born and raised in Irvine, California. At age 18, I trotted off to Arizona State University, where I developed a love for communicating, creativity, and really good beer. Fast-forward seven years, and here I am. Passions still the same, lucky to be living with my high school sweetheart by the beach in a very
small quaint beach house. The only thing missing is a really awesome pup. (Oh, and if I ever started a band, it would be called Kid Sister Kelsey and the Majestic Puppies.)
What's your favorite Beer Friday beer?
Oh man, so hard to choose. I’d definitely have to go with a bold IPA; they’re my favorite. My most current Beer Friday crush is Speakeasy’s Double Daddy IPA. All-time favorite: Fuller’s London Pride.
You're quite the foodie (and a vegetarian); what's your favorite dish to make?
I’m always a sucker for a good food bowl. There’s really no way you can mess up a hodge-podge of quinoa, avocado, sriracha, arugula, tofu, and feta. However, my favorite thing I’ve made is definitely Butternut Squash and Crispy Sage Pizza. Pro tip: Add the sage after baking.
We know you're a beach girl. What's your favorite spot?
I love The Wedge. One of my favorite people, Kaede Holland, lives down there, and it’s just not as congested as the other areas. A close second is 35th street—only a 30-second walk from our place.
What's the coolest/most unique thing you've ever done/experienced?
Going to Europe for a month with two of my closest friends. I know it’s cliché, but it was really unbelievable. We stayed with locals in Amsterdam, a friend’s apartment in Italy, and another friend’s apartment in Spain. I still dream about going back and doing it all over again. I also gained 15 pounds while I was there, thanks to all of the ridiculously delicious things I ate and drank. So. Worth. It.
We asked Kelsey to share some of her favorite C5 projects:
One of my favorite photos captured from our trip in Amsterdam, mostly because I can remember the exact feeling in that moment. It was early and cold, and we were on a roof enjoying some hazelnut lattes. Best I’ve ever had.
Fave selfie. I felt really badass in this one.
My better half, Scott. He was my first kiss in 7th grade. True story.
